Help!! Any ideas??
Jordan's first birthday is Saturday and we are staying in a guest flat with minimal cooking things and minimal cooking ingredients. Don't get me wrong, I'm ok with going to buy ingredients but if I don't have to buy a ton of things it would be better! First I thought about a big chocolate chip cookie. I did bring a 14 inch pizza pan with us so I could do this. But then I think most 1 year olds get to eat a cake...so should I do cupcakes? I did bring my muffin tin, because I was thinking of making blueberry muffins for breakfast. The other wrinkle in that idea is that Jordan's system doesn't seem to like dairy and so I'm not sure icing would agree with her and would be a good idea. And I just realized you normally use a mixer for cakes, don't you? Don't have that! Or always an old standby of mine is brownies. Any ideas? I feel so bad for her, but it's hard when you aren't in your own home! Don't worry, I did bring half of her presents with us. I accidentally packed two of them in our crate that is coming from the States. In January, I didn't realize we wouldn't have it sent until May! It does come Saturday, but they will be storing it in a storage unit until we move! Family members sent her presents too!

Sarah - you can do cupcakes without a mixer - I sometimes just use a spoon and stir it up really well! And you can always just leave the icing of Jordans cupcake. I have done cupcakes for first birthdays with my kids - it is much easier than cake and it is kind of like their own personal cake! Hope it all turns out well! Happy Birthday Jordan!
ReplyDeleteI did an oatmeal spice cake for our guys first birthday. It has no dairy inside - except butter. We made it without the icing because he hadn't had much sugar at that point. The recipe is on our blog.
ReplyDeleteWe lived without a mixer for 4 years (we just found a little hand held one in a city nearby) so you can totally bake & cook without a mixer.
She'll probably also love the fact that she'll get some presents now and some later. No need to overwhelm her with too much at once.
Don't beat yourself up because Jordan's birthday is in transition.
Since it doesn't sound like your housing is ideal, maybe you can have her birthday celebration elsewhere. Oh I don't know...Disneyland! ha ha.
If your flat isn't a fun place, then have your celebration at a park or at Snoopy Cafe!
I suggest gel icing. It doesn't have milk in it (I don't think) and you can get it at City Super. Don't have time to get there? You might have a friend with a tube or two that would be willing to give you some.
ReplyDeleteCupcakes would be great and I think you could do it without a mixer. Once again, you may have a friend who would be willing to loan you one also!

ReplyDeleteI was thinking of a sugar cookie cake and you can turn it into a desert pizza by putting fruit on top and drizzling it with "icing" (powdered sugar mixed with water or orange juice)
Oatmeal spice cake does sound good though :)
This may not help but many of the icings that you can buy premade don't have diary in them (believe me I've checked!). Some do so you just have to read the label. I know we could get them (expensively) in Delhi so maybe there's some in HK too.
